Every single time we make tortillas or tacos I say to myself, oh my, if I only lived in a country where taco Tuesdays were a tradition. But oh, well. We still make them and enjoy all the way to the last bite. You can make all this different combinations of fillings and it's always so delicious. Our favourite are with chicken or tuna filling. It's the ultimate comfort food, when getting messy and dirty isn't a big deal, because you just enjoy the meal and its deliciousness.

To make the filling, first chop the sun dried tomatoes and silverskin pickled onions. Also chop the black olives. Add the drained tuna into a small bowl. Also add the mustard, greek yogurt or mascarpone. Season with sea salt, black pepper, chilli powder and tabasco. Combine well. Add the chopped sun dried tomatoes, silverskin pickled onions and chopped black olives.
Fill the tortillas or taco shells with tuna filling. Add a dollop of greek yogurt, a bit of tabasco sauce, some fresh, thinly sliced spring onion or leeks. Add a tbsp of red kidney beans and a bit of chopped coriander. You can also squeeze some lemon juice over it. Wrap the tortilla and enjoy.
