
These delicious Banana Oat Pancakes are on the menu every week in our home, especially from Monday - Friday when we need a quick, energy boosting breakfast. Pretty often we make this one day ahead, so it's really no fuss in the morning. You can get super creative with the topping, but our favorite is definitely this one: a generous dollop of greek yogurt, coconut flakes, berries and maple syrup (or honey) - of course you can dismiss the syrup if you are trying not to eat sugar, it will be just as delicious. Honestly, we are nb.1 dessert fans, but each year we realize more, that keeping our energy up and staying healthy is the most important thing ever, so it's great to have a healthy alternative, especially for breakfast.
